Spinach Artichoke Chicken Pizza Breads

Yeah, that's a mouthful. I'll probably just refer to them as chicken pizza breads. We love pizza breads at our house- essentially French bread with yummy toppings. Our typical version is beef and mushroom with a tasty red sauce.

1 loaf French bread
1/2 bag frozen spinach or one box-thawed and drained
1/2 jar of marinated artichokes
1 package cremini mushrooms
1 16 oz pkg of chicken breast tenders
1/2 cup each of light mayo, cream cheese, and sour cream (healthy!)
1 cup Monterrey jack cheese
2 cloves garlic
Crushed red pepper flakes
Olive oil
Butter

First, season the chicken with salt and pepper. Heat a skillet over medium heat and add a swirl of olive oil. Cook chicken in oil on both sides for 3-4 minutes. Set aside. Wipe out the pan and lower the heat a bit.

Chop the garlic and slice the mushrooms. Add a tablespoon or 2 of butter to your pan, then the garlic and mushrooms until the garlic is fragrant and mushrooms are soft.

Heat the oven to 350. Chop the chicken and artichokes.

Combine the drained chopped spinach and chopped artichokes. Add the mushrooms, chopped chicken, and 3 sauces. add the cheese and red pepper flakes to taste. Combine thoroughly.

Cut your bread into thirds, and then each section lengthwise. Remove some of the inner section of bread to make room for the filling. Toast the bread briefly in the oven. Add even amounts of filling to each bread. Top with a sprinkling of Parmesan.

Bake for 15-17 minutes till warmed and golden brown.
